About this bean

El Paisa is Frio's brighter roast — a nod to the paisa culture of Colombia's coffee-growing heartland. It's roasted lighter than Tierra Nueva specifically to protect the berry and floral notes, with a nutty finish that rounds the cup out rather than sharpens it.

Best brewed as

Filter / Pour-over

The lighter roast means there are more delicate notes to lose to a long cold steep. A filter or pour-over brings out the floral and berry character properly — though it still makes a genuinely good iced coffee if you brew it hot and flash-cool it over ice.

How to brew it

Grind & ratio

Grind medium-fine — like table salt. Use 1 part coffee to 16 parts water, just off the boil at 94–96°C.

Bloom

Pour twice the coffee's weight in water over the grounds and let it sit for 30 seconds — this lets the coffee de-gas evenly before the main pour.

Pour

Pour the remaining water in slow circles over 2.5–3 minutes total, keeping the bed of grounds level.

Serve

Drink straight, or pour hot over a full glass of ice for an iced pour-over.
